Many people have asked me if I have had any weird cravings while being pregnant. I wouldn’t exactly call it “weird” but I have wanted all those sugary cereal’s that I used to love as a kid, which for me is definitely not normal. I hardly ever eat just a bowl of cereal because 1. It stays with me for all of 5 minutes unless I add lots of fruit and or yogurt to it and 2. I can’t stop at just one bowl and find myself pouring more and more cereal until all of the milk is gone. Please tell me I am not alone in this? Before I was pregnant you would find the more healthy cereals in our house with low sugar and lots of fiber. Now when you open our pantry it looks like a 6 year old was let loose in the cereal isle at the grocery store.
With St. Patrick’s Day coming up there have been several pins going around on pinterest using lucky charms as an ingredient to cupcakes, snack mixes, and rice crispy treats. Since I started seeing these post a few weeks ago I have not been able to get those tasty little marshmellows out of my mind. I told myself if I was going to buy some Lucky Charms then I needed to make something festive for St. Patrick’s Day. This is what led me to make this highly addicting sweet and salty snack mix.
The combination of the Lucky Charms, M&M’s and honey paired with the saltiness from the pretzels and chex cereal is what keeps big and little hands diving into this mix of goodness over and over. I made a few minor changes to this recipe by using honey instead of corn syrup and I left out the peanuts entirely. With St. Patrick’s Day coming up this is a great snack to send to school with your child or to share with your coworkers or neighbors for a little treat.
Lucky Charms Snack Mix
(Recipe adapted from Quick Dish)
– 4 cups Lucky Charms Cereal
– 2 cups pretzel twist, broken
– 2 cups wheat chex cereal
– 1/4 cup green M&M’s (or other chocolate covered candy)
– 1/2 cup brown sugar
– 1/4 cup butter
– 2 tablespoons honey
– 1/8 teaspoon baking soda
– Pour cereals and pretzels into a large bowl
– In a microwave safe dish, microwave the brown sugar, butter and honey (1 to 2 minutes). Stir until the mixture is smooth. Remove bowl from microwave and add in the baking soda.
– Pour over cereal mixture, mixing until evenly coated.
– Stir in the M&M’s
– Allow the snack mix to cool then transfer to an airtight container
