1. This snack:
Using three simple ingredients: graham crackers, ripe bananas, and crunchy all-natural peanut butter, this sweet treat is dairy-free, contains no added sugar, and tastes like an ice cream sandwich. Even better it’s under 1oo calories. I made a batch last weekend to store in the freezer and have been enjoying them in the afternoons for a snack or at night when I am looking for something sweet. You can find this super simple recipe here.
2. Friday night lights:
I realize I am a little behind the times on this one but Jason and I recently started watching this series and we are both hooked. We are able to watch this for free on amazon, which is another reason why I love amazon prime.
3. 5 months old
This sweet girl turned 5 months old this week. Each month continues to get better and better (which I didn’t know was possible) as she gets bigger and her little personality continues to shine. People are always telling us how quickly kids grow up and I am starting to fully understand. There are many days I wish I could freeze time so I can soak up a little more of these precious days.
4. Almond Milk Latte
Seriously, sometimes it’s the littlest of things that make me so very happy. Since I have stopped eating dairy and soy one of the things I have missed the most is a good coffee drink. Usually once a weekend Jason will run out and get us a “special coffee” which basically just means a trip to Starbucks where he purchases either a latte or cappuccino for me and a triple shot non-fat latte for him. Since Starbucks only offers soy milk or cows milk I haven’t been able to enjoy a “special” coffee lately. Yesterday while Jason sand I were having lunch near one of the local coffee shops that we absolutely adore I decided to pop in see if they offered Almond milk it. I had heard that some of the smaller shops were starting to do so and sure enough this little gem did. We prefer to buy coffee from local coffee shops anyway but purely based on convenience we often times find ourselves at Starbucks instead. It is time they jump on the almond milk band wagon.
Since we are on the subject of coffee does anyone else find that coffee made by anyone other than themselves taste 10 times better?
5. The weekend
We have a fun yet very busy weekend ahead of us. It all starts tomorrow morning as I attend a cooking class that Jason bought for me last Christmas. The theme of the class is “Thai one on” where we will be learning how to make Thai food and pairing it with different wine selections. This was the perfect gift for me and I have been looking forward to cashing in my coupon since I received it. After class the remainder of our day will be spent getting ready for Sunday’s festivities. Our little peanut is getting baptized. It is going to be a very special day and we have lots of family planning to attend church with us that morning. Afterwards everyone is coming back here for a good old southern style lunch consisting of BBQ, lots of sides and banana pudding.
