As I was crawling into bed last Sunday night this recipe came to me as I was trying to think of every possible way I could use the grill for our labor day cookout. To be honest I am still not sure why I was determined that everything needed to be grilled because the truth of the matter is we use our grill all year long. I guess for me, summer is the ultimate grilling season and it only seemed right to say farewell to the season by making the most use of our beloved grill and eating till our hearts were content. This grilled peach salad will have you enjoying every remaining taste of summer before it fades into fall.
It’s simple, healthy and incredibly delicious. Sweet and smoky peaches, creamy goat cheese and crunchy pecans with a honey balsamic dressing drizzled over top. I had to refrain myself from taking a straw to the dressing alone. It’s so good!
This salad is simple enough for a light weeknight meal or elegant enough to serve to guest as a side or starter at your next dinner party.
- 5 cups mixed greens
- 2-3 peaches, halved
- 4oz. goat cheese
- ½ cup chopped pecans
- ¼ cup Balsamic Vinegar
- ½ cup honey
- ¼ teaspoon dried rosemary
- ⅛ teaspoon black pepper
- Heat your grill. Place the peach halves on the hot grill face down and cook until peaches are softened and grill marks appear, about 4 to 5 minutes. When peaches are grilled, set aside and allow them to cool to room temperature.
- Arrange the peaches cut side up over a bed of mixed greens on a serving platter. Top with, pecans and goat cheese and drizzle with honey balsamic syrup.
