The inspiration for this delightful quick bread came from Eat, Live, Run after she posted this recipe. I used half whole wheat flour and half all-purpose and substituted almonds instead of pecans. It’s so simple to put together, making it a great option for a special weekday breakfast for your family. You can also wrap it up nicely and give as a housewarming or hostess gift to neighbors and friends.
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 2 teaspoon baking powder
- 1 cup milk
- ¼ cup sugar
- ¼ cup honey
- ¾ cup almonds, chopped
- 1 beaten egg
- ½ teaspoon salt
- Preheat oven to 350 degrees. Spray a 9″ loaf pan with nonstick cooking spray and set aside.
- In a large bowl, mix together the dry ingredients. Add the beaten egg, honey, and milk. Mix well. Fold in the almonds.
- Pour into greased loaf pan and bake for 50 minutes or until golden (stick a knife in the center to make sure it comes out clean).
- Let cool and serve with lots of butter!
