Last week I was on a roll in the kitchen. I made several noteworthy dinners that I definitely feel are worth sharing. These pictures were quickly taken on my camera phone so they aren’t the best quality. At the time I wasn’t sure if I was going to post them but I figured everyone could use a little dinner inspiration for healthy quick and easy weeknight dinners, which all of these are. Green beans, sautéed shrimp (sprinkled with Old Bay seasoning), crab cake and mashed cauliflower and potato. The crab cakes are from Bill’s Seafood at Sunset Beach and they are the BEST. They have a cooler full of their frozen crab cakes and we always grab a couple to bring back home. For the cauliflower and potato mash I simply boiled 1 head of cauliflower and 3 to 4 red potatoes. Once everything is soft, drain water and blend using an immersion blender. Spoon in butter, salt, and pepper.
