I always like reading these types of post on other blogs for ideas and inspiration so I am going to continue to post dinner recaps every now and then. Plus I can go back to these when I start to find myself getting in a rut in the kitchen. I hope you find this post as helpful as I do.
Pizza using Trader Joe’s whole wheat pizza dough with red onion, figs, prosciutto, goat cheese and manchego with a balsamic drizzle.
Fish Tacos with grilled corn, black beans, slaw and topped with spicy mayonnaise. Fruit salad on the side.
Salad with leftover tilapia (from the fish tacos) grilled corn, black beans and artichokes on top of arugula with Honey Mustard dressing.
Taking advantage of summer produce while I still can: Turkey burger with tomato and homemade Tzatziki sauce, zucchini and roasted potatoes.
Cheese tortellini with kale, chicken sausage, zucchini, and onions.
This is a meal we had with friends while in the mountains that was perfect for a Saturday night dinner date in. Grouper topped with a ginger sauce over coconut rice. Salad on the side with Bibb lettuce, peaches, strawberries, red onions, and croutons with Poppy Seed dressing.
