Here’s my first pumpkin recipe of the season and just a warning, it wont be my last. The past few days have been cloudy, rainy and bit more chilly so I chose to take this time playing in the kitchen with some fall(ish) flavors. Fall is clearly here and I am finally at the point I am ready to embrace it. I even did some fall decorating this week, which other than the typical pumpkins and mums, is not something I usually do.
First up on my list of pumpkin recipes for the season is this healthy and delicious pumpkin pie smoothie. If you like the taste of pumpkin pie then you will love this. The star of the show in this smoothie is the pumpkin which delivers many health benefits including lots of fiber and key vitamins and minerals. It’s great for breakfast, a pre or post workout drink or an afternoon snack. It’s easy to assemble and perfect for those days when we are needing to grab something quick and on the go.
I recommend using a frozen banana since it adds a thicker texture to the smoothie, giving it more of a milkshake-like consistency.
Recipe yields: 1 serving
- 1 frozen banana
- 1 cup almond milk (or other milk of choice)
- ½ cup pumpkin puree
- ½ tablespoon honey
- ½ teaspoon pumpkin pie spice
- ¼ teaspoon vanilla extract
- Add all the ingredients to a blender an blend until smooth. Enjoy
