I have a few incredibly delicious and noteworthy dinners I have cooked up lately that I wanted to share with you. Let me know if you have any recipes you think I should try or some of your families favorites in the comments section below. I am always looking for new things to try.
Chicken Cordon Bleu meatballs from the Skinnytaste Cookbook served with grits and roasted broccoli.
Macaroni and Cheese with Truffle Oil, Green Beans, and Smoked Brisket that a neighbor brought over.
Spinach Artichoke Pasta with Shrimp. This dinner came about on a whim but Jason and I were so happy with the way it turned out. I knew I wanted to do something with a can of artichokes I had on hand along with some frozen shrimp in the freezer so a quick Google search led me to this recipe. We had the cheese and spinach already and I just substituted spaghetti noodles for Farfalle and 20 minutes later dinner was on the table.
Potato Soup with pimento cheese toast. My mom made a huge batch of this soup for us the other week. It was a different variation from her other potato soup and I have to say I like this one even better. I will update the recipe soon. The secret was an addition of rosemary. So so good.
The other weekend we waited for Scottie to go down before enjoying this at home date night dinner (it was well past dark which explains the poor photo quality.) Lamb Loin chops with Tomato and Rosemary from Modern Classics cookbook served over whipped parsnips and roasted Brussels sprouts
Turkey Pot Pie with Sweet Potato Biscuits. Using up leftovers from an early Thanksgiving dinner we hosted for Jason’s side of the family. This dinner was warm, comforting and just perfect for this time of the year. I highly recommend giving it a try if you find yourself with lots of Thanksgiving leftovers. You could also sub in chicken for the turkey.
