Weekly Meal Plan: 1-11 to 1-17

Look who got their act together in advance and made a weekly meal plan. I was so excited about trying some new recipes I sat down Friday afternoon and decided on the dinners I was making this week and wrote out my grocery list. I don’t normally try all new recipes in one week (or ever for that matter) but this week I am feeling ambitious. Like I mentioned in my post on Friday, I am eager to try new meals in the kitchen and start making a dent in my long long list of recipes to try. I can’t promise that I will be posting our meal plans every week but I would like to do it every now and then. Please feel free to leave me some of your favorite dinner ideas in the comments section below.

Sunday- Beef and Lamb Meatballs with Edamame and Lemon served over cauliflower mash. from the Jerusalem Cookbook.
The recipes calls for fava beans but I am using edamame in it’s place

Monday- Skinnytaste Kung Pao Chicken Zoodles

Tuesday- Leftovers

Wednesday- Healthy Mushroom Alfredo Pasta Bake from Pinch of Yum

Thursday- Thai Coconut Chicken Soup- Recipe coming soon

So there you have it. What do you think? Have you made your menu plan for this week yet?

I do try to make my meal plan every week before I go to the grocery store so that I know what to buy. We don’t follow it 100% but at least we have the ingredients on hand to make balanced dinners!
