It’s been a while since I linked up for a What I Ate Wednesday post so I thought this week would be a good opportunity to join in the fun again.Yesterday Charlotte got our first “snow” fall of the season which really meant lots of ice and no where to go. Seriously, I changed into workout clothes for a quick work out upstairs yesterday morning then spent the remainder of the day in my pj’s. What is it about snow days that makes me want to eat all day and drink wine? I guess it’s a good thing I live in a place where snow isn’t our normal. Here’s a look at what I ate yesterday (Tuesday) while we were stuck inside. I wish I could say this is all that went into my mouth but I also snagged a few unpictured items like a handful of trail mix and my daughters leftover mac and cheese at dinner. Breakfast: Banana Oatmeal with a big scoop of peanut butter. Half a banana, 1/3 cup oats, 2/3 almond milk microwaved for 2 minutes then topped with banana slices and peanut butter.
Lunch: Whole Wheat toast with ricotta, honey and pistachios. Grapes on the side
Snack: No Bake Energy BiteDinner: Cornbread Panzanella Salad With Roasted Beets: I used smoked salmon in place of the bacon. I can’t get enough of this salad which is a good thing considering my lack of anything green in my previous eats.

On my snow day what did I eat for breakfast? COLD cereal, hahahahahahaha! I’m so backward 😉
