Dinners Lately

I’ve mentioned we’ve been spending a lot of time at our mountain cabin lately but that hasn’t stopped me from cooking dinner for my family. Usually when we are there for an extended stay like we have been I make a few large dinners and we make do with leftovers during the week or I make meals that take little to no time at all to prepare. There is nothing mind-blowing about any of the dishes I am about to show you they’re just simple examples of quick, easy and healthy dinners. With school starting back and the hustle and bustle the new season brings we can all benefit by not spending too much time in the kitchen. Plus an inside look at what others are eating can spark a little inspiration and for me that’s never a bad thing.

IMG_1047Chicken breast, coconut rice and spinach salad. For the chicken: Add salt and pepper to it. In two separate bowls add one beaten egg and in the other panko bread crumbs. Dip the chicken in the egg then the panko bread crumbs. Make sure the chicken is fully coated. Bake in a 350 degree oven for 30-35 minutes.

    Love all these ideas for dinner, especially because they’re super simple too! That Prosciutto and Pineapple Pizza is totally calling out my name 🙂
