Happy Friday. With Monday being a holiday it’s made for a really fast and busy week. I had intentions of getting a blog post up earlier in the week but unfortunately I couldn’t make it happen. My two year old started school this week and even though it’s only for a few hours two days a week we are working on finding our groove and a new routine. Anyway, here we are with another weekly Friday favorites post but first I have some exciting news to share with you all. A few weeks ago I was asked to submit up to six recipes to the upcoming cookbook, The Casual Veggie. I found out last weekend that five of the recipes I submitted will be featured in the Cookbook, which is available for sale on October 19th. The idea for The Casual Veggie cookbook came from Maggie, the blogger behind Parley and Pumpkins, after so many nights standing in front of her refrigerator wondering what to do with all the beautiful veggies she had bought. If your anything like Molly and I, sometimes we get carried away at the farmers market or in the produce isle at the grocery store then later find ourselves trying to find ways to use up all the goods before they go bad. This book will have you covered and I am so excited to be a part of it. I can’t get my daughter to eat much, if anything, for breakfast these day but I’m hoping these Chocolate Coconut Overnight Oats might change that.
I love, love, love banana pudding so I definitely want to give this healthier spin on this classic dessert a try.
