7-Ingredient (Or Less) Recipes

It’s Income Tax Season, so our brains could use some easy arithmetic; as in seven-ingredient-or-less recipes. Show us the healthy, no-brainer dish you fix for breakfast, lunch or dinner. Think beyond smoothies or drinks, please. (And for those of you living in countries where it’s not Tax Season – we’re pretty sure you and your readers would still love doing the math for seven-ingredient-recipes!

Nothing turns me off from cooking a recipe faster than a long list of ingredients needed to prepare it. These days I’m all about quick and easy recipes with little to no prep work and usually that means a short and simple ingredient list. This herbed goat cheese stuffed chicken breast could not be easier to make and even better it only requires 5 ingredients, two of which are salt and pepper.

With just a few simple ingredients ordinary chicken breast gets transformed into something flavorful and delicious. The combination of the herbed goat cheese and pancetta will blow your mind. As the cheese melts it becomes nice and creamy helping to create a juicy and tender piece of chicken.
This dish is easy enough for a weeknight dinner and impressive enough for a dinner party.

Serve the chicken with a simple salad or green vegetable and maybe even a toasted baguette for a well balanced and healthy meal that comes together in no time at all. You can save even more time if you stuff the chicken breast in advance (like naptime) so all you have to do when it comes time for dinner is pop it in the oven to cook as you prepare your side. This chicken is perfect in every way and with just 5 ingredients and very little prep work it can be ready and on your table in less than 45 minutes.

Herbed Goat Cheese Stuffed Chicken Breast

Serves: 3 servings
Ingredients
  • 2oz. herb goat cheese
  • 2oz. diced pancetta
  • 3 skinless, boneless chicken breast
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
Directions
  1. Preheat oven to 400 degrees
  2. Combine the goat cheese and pancetta in a small bowl. Cut a horizontal slit down the side of each chicken breast forming a pocket. Divide the goat cheese mixture into three equal portions and stuff inside of each pocket; close opening with a toothpick. Sprinkle the outside of each chicken evenly with salt and pepper.
  3. Add chicken to a baking dish and bake for 25 minutes or until chicken is done. Discard the toothpicks.
  4. Serve immediately
