I’m popping in real quick to share this creamy avocado dressing with you so that you can add it to this weeks menu. With Cinco de Mayo only a few days away this dressing is the perfect topping for tacos, enchiladas, salads or grain bowls. Heck, you can even forgo the whole Mexican party and add it to burgers, chicken or as a spread on a sandwich or wrap. Either way this sauce needs to become your new best friend. I’m having a moment with Avocados right now and I don’t see myself jumping off the bandwagon anytime soon, especially now that I’ve been introduced to this creamy goodness. My husband, who is a little iffy about avocados, absolutely loved this dressing and asked that we keep it in the house on the regular.
This avocado dressing is not only delicious but it’s healthy too. It comes together in no time at all as you simply throw all the ingredients into a blender and blend. It will last in the refrigerator for up to three days. This recipe comes from the Pure Food Cookbook by Veronica Bosgraaf and found on the Popsugar website.
- ½ cup olive oil
- 1 tablespoon honey
- 1 garlic clove
- 1 medium avocado, peeled, pitted and chopped
- juice of 1 lime
- ¼ cup fresh orange juice
- sea salt and freshly ground black pepper
- In a blender, combine the oil, honey, garlic, avocado and lime and orange juices, and season with salt and pepper. Puree until smooth. The dressing will keep in an airtight container in the refrigerator for up to 3 days.
