I’ve compiled a list for a few of my favorite recipes that I start breaking out as soon as the temperatures begin to drop. Some of these recipes are mine while others come from other blogs. I’ve made all of these recipes time and time again and they’re the ones that come to mind when I think of a warm and comforting meal on a cold day. Not only are all of these meals hearty and satisfying but they are healthy too.
Slow Cooker Mexican Quinoa.
I couldn’t wait another minute to make this recipe so last weekend it made an appearance. Even though the temperatures have yet to drop. I justified it by the fact that football was on TV and it is officially fall regardless of what the temperature is. It’s seriously so easy to throw together and it makes enough to eat on all week long.
Perhaps my favorite thing to make during the colder months is chili and the three recipes below are the ones I use the most.
You can’t serve chili without cornbread to go with it.
Braised Short Ribs
This meal is Jason’s specialty. He makes this for us several time a year, always in the colder months, when we are wanting to relax at home with a nice dinner and a bottle of wine. Serve with polenta or mashed cauliflower and a vegetable for a complete meal.
Butternut Squash Soup– This soup is the perfect way to take advantage of this seasonal veggie and only a few simple ingredients are needed to make it happen.
Pizza Spaghetti Pie
We actually made this all summer long but its easily become one of our very favorite meals. Because its hot and baked in the oven it has more of a comport food vibe, so I’m including it in this list as well.
