My love for sandwiches runs deep. They’re a quick and easy go-to meal, which is about all I have time for these days with two little ones at home with me. Since they can be customized based on personal preference and ingredients available, there are many different flavor combinations that can be used so you don’t feel like your eating the same thing day after day. Normally I keep my sandwiches simple with just ham, mayo or hummus, and maybe a little spinach but if I allow myself a few extra minutes I can take a sandwich from good to great. That’s what I did here with this Ham and veggie sandwich since I took the time to chop up a few extra ingredients to add inside. There is nothing mind blowing about this recipe but hopefully it will inspire you to step up your sandwich game as well if you find yourself in a rut.
This ham and veggie sandwich includes it all: whole grains, protein, healthy fats, fiber from the hummus and additional vitamins and minerals from the veggies. The addition of the honey mustard sabra spread gives this sandwich some pizzazz by adding a creamy texture and a slightly sweet taste. Layers of flavor and texture are brought together for an easy, healthy, and filling meal.
- 2 slices whole wheat sandwich bread
- 2 tablespoons Sabra Spread Honey Mustard
- 2-3 slices deli ham
- ¼ of avocado, sliced
- Small handful spinach
- 6 slices cucumber
- Build your sandwich by spreading a tablespoon of Sabra hummus spread on each bread slice. On one slice of the bread begin layering the toppings by first adding the ham, then the avocado and cucumber slices and finishing with the spinach. Top with the remaining slice of bread.
