This snickerdoodle cashew butter is the perfect gift for storing inside a mason jar and wrapping in a ribbon for some of those special people on your Christmas list. It’s smooth and creamy with the same great taste as one of our favorite winter cookies.
I have an obsession with any and all nut butters and I’m a sucker for all the fancy and seasonal flavors. Over the years I’ve learned that making your own nut butter is easy to do, not to mention it’s better for your wallet. Those tiny jars can add up fast, especially if your family is like mine and have no less than 3-4 jars open at one time. I love to play around with different flavor combinations and this snickerdoodle creation is the best yet. Vanilla and cinnamon have been added to the cashew butter for a delectable, and healthy spread.
- 3 cups raw cashews
- 2 teaspoons vanilla extract
- 2 teaspoons cinnamon
- 1-2 tablespoons coconut oil, melted, if needed
- Place cashews into a food processor and process until smooth. You will need to periodically stop and scrape the sides. Once smooth and in the cinnamon, vanilla and coconut oil and continue to blend until combined. The process will take about 10 minutes.
- Store in a glass container, such as a mason jar, in the refrigerator.
