My Favorite Recipes from 2016

Before I start posting new recipes for the new year I wanted to reflect back on the past year and share some of My favorite recipes posted in 2016. I shared my list for reader favorites a few days ago and, whereas they are certainly good ones, I wanted to highlight a few of my personal favorites  as well. All of these recipes have been made multiple times over the past year and I highly recommend giving any one of them a try.


Easy Mushroom Risotto
This dish made another appearance New Years Eve for me and my family. It’s much easier to make than typical risotto dishes and so so good!

Buffalo Cauliflower Bites with Vegan “Blue Cheese” Dressing
These tasty bites made it onto your top favorites list as well and for good reason. They are highly addicting with just a touch of spice and the creamy ” blue cheese” dressing compliments them perfectly.

Kale Salad with Tarragon Vinaigrette
I literally ate this salad almost daily for several months. It’s simple yet delicious and the tarragon vinaigrette is what really makes this salad something special.

Banana Walnut Baked Oatmeal
There’s nothing like a delicious and healthy make ahead breakfast that you can eat on all week long.

Snickerdoodle Cashew Butter
We loved this spread so much I ended up making several batches to give to friends for the holidays.

Zucchini Summer Salad
This light, fresh, and flavorful salad is full of summers freshest produce.

Turkey Enchilada Casserole
Layers of corn tortillas, seasoned ground turkey and enchilada sauce is topped with melted cheese to bring you this comforting, yet healthy, Mexican inspired casserole. This recipe is guaranteed to be a family favorite for sure.

I make a batch of this every couple of weeks to keep on hand for a quick and easy lunch option.

    These all look tasty, but I think I need that snicker doodle cashew butter STAT!
