Good morning friends. I’m keeping this introduction short and sweet so I can get ready for my book club discussion this morning. I missed posting my favorites last week since my family and I were at Disney World (which I hope to recap next week). Sadly the warm weather we’ve been experiencing isn’t here to stay because they are calling for snow flurries here on Sunday. What?! Other than a birthday party and church on Sunday we have no other plans and I am more than OK with that. Have a wonderful weekend.

I enjoyed the 70 degree sunshine yesterday while watching my daughter during her soccer practice.

These gluten-free spinach pancakes are perfect for St. Patrick’s Day.

With the warm weather approaching my body tends to crave more salads. Here’s a roundup of the best green salads from a Dash of Sanity. And speaking of salads in case you missed my post earlier in the week, this Kale and beet salad with pita croutons is definitely worth adding to your list.

This Italian Pulled Pork Ragu is happening this weekend.

We could be getting more Gilmore Girls. Thoughts? I for one, love the idea especially after the ending in the revival.

No bake sun butter and carrot bars

Last week I tasted Swedish Meatballs while visiting Norway at Epcot. They were so good so I was excited when I came across this recipe so now I can try recreating them at home.

I finished The Handmaid’s Tale last night, just in time for our book club discussion this morning. This popular book was written in the late 90’s and is soon to become a TV series on Hulu. Surprisingly none of us had read it before and it was on many of our to-be-read list so it was the obvious pick for us this month. Verdict: It was a really great story and unlike anything I’ve read before. The author leaves the reader with a cliffhanger that allows for several interpretations to the ending. I am very excited to see this book unfolds into a TV series.
