Summer gatherings are the best. Most of the time they’re impromptu and casual with a no mess no  frills kind of evening. Having an appetizer on hand that uses few ingredients and is easy to prepare is key for nights like this. After spending the day at my parents pool this past weekend  I was quickly able to put together these crackers with roasted tomatoes and goat cheese using mostly fresh and seasonal ingredients. It could not have been more perfect for an afternoon cocktail hour.
I used Breton Crackers as the base for this recipe. Breton crackers offer a  crispy texture and delicious flavor, making them the perfect appetizer cracker for any occasion. For this contest I chose to use the Breton Artisanal Sweet Potato & Grain cracker’s, made with ancient grains like quinoa and rye, and sweet potato pieces baked right in. Even without a topping these crackers taste great on their own and would be a great addition to a cheese platter or other snack board.
Tomatoes are abundant this time of year and I can’t get enough of their fresh and flavorful taste. Even more so after they’ve roasted in the oven. Something magical happens inside of the oven and if you’ve never made oven roasted tomatoes before, I highly recommend adding this to your summer bucket list. They’re easy to make and the flavor simply can’t be beat.
 
For this dish sweet and juicy tomatoes are combined with creamy, tangy goat cheese and topped with fresh basil. Layered on top of Breton Sweet Potato and Grain crackers this is an appetizer everyone will love.

Crackers with Roasted Tomatoes and Goat Cheese

Serves: 20 crackers
Ingredients
  • 20 Breton Artisanal Sweet Potato and Ancient Grain Crackers
  • 4 cups grape tomatoes
  • 3 tablespoons olive oil
  • 4 oz. Goat Cheese
  • salt and pepper for seasoning
  • Fresh basil, chopped to garnish
Directions
  1. Preheat oven to 400 degrees
  2. Add the tomatoes to a baking sheet and drizzle with the olive oil, salt and pepper. Roast in the oven for 20 minutes or until the tomatoes begin to burst.
  3. Spread evenly the Goat cheese over top each cracker. Top with the tomatoes( 3-4 for each cracker) and sprinkle with fresh basil.
