May Cookbook Club #4

Welcome to Our May cookbook club link up party. Nina and I are always talking about the different food network stars as if they’re our real life friends so it’s only fitting we should choose a book by one of our favorites. This month we’re talking about Giada de Laurentiis and her cookbook Giada’s Feel Good Food.

Giada states at the beginning of the cookbook that this is not a diet book. Instead this book is about how she’s found balance over the years by tuning into her body and finding what foods make her feel best. If we put a bit more attention into the foods we put into our bodies we can feel better, both mentally and physically. Through these recipes, Giada shows us that food can be both healthy and delicious in a simple and easy way.

The book includes sections for breakfast, juices & smoothies, lunch, snacks, dinner and dessert. Giada calls out whether a recipe is vegetarian, vegan, gluten-free or dairy-free to give many alternatives for different peoples needs.

For this review I chose to make the grilled salmon and pineapple with avocado dressing. Its light and healthy, and the perfect thing to make as the weather is heating up. This dish is beautifully presented yet it could not be easier to make. Since my husband is the grill master I kept him in charge of the salmon and pineapple so all I had to handle was the avocado dressing. The pineapple replaces the starch while also adding some sweetness to the dish.

Since I had fresh parsley on hand I chose to use that in place of the other herbs mentioned. The avocado dressing called for a tiny bit of anchovy paste but I left it out since I didn’t have any and I’ve made other versions of this dressing before without it. Other than changing a few  herbs and the paste I kept everything else the same. This was such a nice change from how we normally eat salmon and it was a big hit for Jason and I.

All of the recipes from this cookbook look fresh and flavorful and I can see myself making any one of them. Some that have really caught my attention is the

Lemon- Mustard Potato Salad

Shrimp and Avocado Salad

and the Cinnamon Kettle Corn.
