At the beginning of each month I’ve been showcasing a food known for it’s healing properties. You can read more about this series here if you aren’t familiar. For June I’m focusing on eggplant and how it can be used to heal the body and bolster good gut health. Although often considered a vegetable, eggplant is technically a fruit, as they grow from a flowering plant and contain seeds.
Eggplant contains an impressive array of vitamins and minerals, such as fiber, folate, potassium and manganese, as well as vitamins C, K, and B6. It’s a great source of antioxidants, one of the body’s best lines of defense against a wide variety of diseases and conditions. Not only is eggplant a high-fiber, low-calorie food rich in nutrients but it comes with many potential health benefits as well. I’ve mentioned several of these below.
1. Eggplant is a great sourcesof dietary fiber, which aids in digestion.
2. The amount of potassium in eggplants helps in the uptake of calcium, which is very good for bone health and people at risk for osteoporosis.
3. Eggplants have a decent amount of iron in them, which helps to prevent anemia.
4. Eggplants are a wonderful source of phytonutrients, which improve brain function and general mental health.
5. Eggplant may improve heart health as they have been known to reduce the presence of “bad” LDL cholesterol in the body, and stimulate the uptake of “good” HDL cholesterol.
6. Eggplants are an ideal food for managing diabetes due to their high-fiber content and low amounts of soluble carbohydrates.
7. Eggplants are a rich source of folic acid. Folates are an essential part of any diet, and folic acid is particularly beneficial for pregnant women.
Eggplant is a versatile ingredient that can be prepared and enjoyed in a variety of different ways.
