Sweet Potatoes are a starchy, sweet-tasting root vegetable, and one of my most favorite foods. There are so many different things you can make using them, which is why I keep a few in my pantry at all times. Sweet potatoes can be found in your local markets year-round, however they are in season in November and December. That’s why you will see them displayed among many of our Thanksgiving tables. Not only are they delicious but they’re some of the most nutritious vegetables around, as you can see below.
- They’re a good source of vitamin C and A. Both nutrients are vital for supporting immune function, which is especially important during cold and flu season. Vitamin A is also key for maintaining healthy skin, vision, and organ function.
- Sweet Potatoes are loaded with antioxidants. Vitamins A and C also function as antioxidants that protect cells against aging and disease.
- They contain anti-inflammatory nutrients.
- Sweet Potatoes are high in fiber and help promote a healthy digestive system.
- Sweet potatoes help regulate blood pressure due to their high fiber content. They’re a slow burning starch, meaning they won’t spike blood sugar and insulin levels.
