Butternut Squash and Turkey Chili

Ingredients
  • 1.3 lb lean ground turkey
  • 1 can black beans
  • 1 can garbanzo beans, drained
  • 1 (14.5 oz) can fire roasted diced tomatoes
  • 1 can diced tomatoes and green chilies
  • 1 15oz. can tomato sauce
  • 1 medium onion, chopped
  • 1 green pepper, chopped
  • 1 medium butternut squash, peeled and diced
  • 1 tablespoon chili powder
  • 1 teaspoon paprika
  • salt and pepper to taste
Directions
  1. Brown turkey and onion in a skillet over medium-high heat until cooked through. Drain any fat and transfer to a large pot (or crock pot)
  2. Add in butternut squash, chopped pepper, beans, chilies and tomatoes.
  3. Add spices and mix well.
  4. Simmer on the stove top for at least one hour or in the crock pot on low for 6-8 hours.
