Bourbon Glazed Salmon

  • 1 lb. fresh wild salmon
  • Marinade:
  • ¼ cup brown sugar
  • ¼ cup bourbon
  • ¼ cup reduced-sodium soy sauce
  • Juice from 1 lime
  • 2 cloves garlic, chopped
  • 2 teaspoon grated and peeled fresh ginger
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  1. Combine the marinade ingredients in a small bowl.
  2. In a large zip-lock plastic bag add the salmon fillet. Pour in the marinade; Seal bag and marinate in refrigerator at least 30 minutes. Remove fillet from bag; discard marinade.
  3. Place salmon on a sheet pan coated with cooking spray. Broil 10-12 minutes or until fish flakes easily when tested with a fork.
