Pea, Ricotta and Bacon Salad

Ingredients
  • 1 bag Libby's vegetable pouch peas
  • 3 slices Boar's Head fully cooked microwaveable bacon, heated and chopped
  • ¼ cup part skim ricotta cheese, crumbled
  • 2 tablespoons chives, chopped
  • ½ teaspoon basil
  • salt and pepper to taste
Directions
  1. Microwave peas following directions on the package (1 minute)
  2. Microwave bacon till cooked and crispy (25 seconds). Chop once it has cooled
  3. In a serving bowl add peas, bacon, ricotta, chives and basil. Sprinkle in salt and pepper to taste. Gently toss to mix.
  4. Serve warm or at room temperature
