Applesauce-Granola Quick Bread

Ingredients
  • 1 cup applesauce
  • ½ cup plain Greek yogurt
  • 2 eggs
  • 1 teaspoon vanilla
  • 1½ cups all-purpose flour
  • ¾ cup sugar
  • ¾ cup granola, divided
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • ¼ teaspoon nutmeg
Directions
  1. In a large bowl, whisk applesauce, yogurt, eggs and vanilla
  2. In a separate bowl whisk flour, sugar, baking powder, cinnamon, salt, baking soda, nutmeg and ½ cup granola.
  3. Fold the wet ingredients in with the dry ingredients. Pour mixture into a 9 x 5 inch greased loaf pan.
  4. Sprinkle ¼ cup granola down the center of the loaf.
  5. Bake 50-60 minutes on 350 degrees.
  6. Allow bread to cool before removing from pan.
