Flatbread with Sauteed Onions, Cheddar, Pancetta, & Pears

  • 2 Flatbreads- Homemade or store bought
  • 1 cup Cabot Farmhouse Reserve Aged Cheddar Cheese, shredded
  • 1 small red onion, sliced
  • 1 pear thinly sliced (may not use it all)
  • ⅓ cup pancetta, cooked and diced
  • 1 tablespoon olive oil
  • 1 teaspoon Thyme
  1. Preheat oven to 400 degrees
  2. Prepare the sauteed onions: heat olive oil in a pan over medium heat. Add onion slices and cook, stirring frequently, till onions are tender and golden
  3. Spread ½ tablespoon of olive oil and ½ tablespoon thyme to each flatbread. Cover with the pear slices and top with sauteed onions, cooked pancetta, and cheese.
  4. Place the flatbreads on a parchment lined baking sheet or a pizza stone and bake till cheese has melted (7-10 minutes)
  5. Allow to cool slightly before slicing
