Dark Chocolate Peanut Butter Granola

Recipe yields approximately 5 cups of granola
  • 4 cups old fashioned oats
  • 1 cup slivered almonds
  • ¼ cup coconut oil, melted
  • ⅓ cup maple syrup
  • ½ cup natural creamy or crunchy peanut butter
  • ⅔ cup dark chocolate chips
  • ½ teaspoon sea salt
  • ½ teaspoon cinnamon
  1. Preheat oven 325
  2. In a large bowl mix oats, almonds, cinnamon and sea salt
  3. Warm peanut butter, oil and syrup in a small saucepan till melted and smooth
  4. Pour over oats and stir till well combined
  5. Spread mixture evenly on a large baking sheet and bake for 30 minutes, stirring every 10 minutes. Watch closely towards the end to keep from browning
  6. Remove granola from oven and add in the chocolate chips. Stir, allowing some of the chocolate to melt.
  7. Cool at room temperature. Mixture will keep for up to two weeks if left at room temperature and longer if stored in the refrigerator (few months)
