Blueberry Flaxseed Muffins

Ingredients
  • 2 cups whole wheat flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • 1 large egg
  • ¾ cup sugar
  • ¼ coconut oil
  • 1 cup unsweetened applesauce
  • 1½ teaspoons lemon zest
  • 1 teaspoon vanilla extract
  • ¾ cup low-fat buttermilk
  • 1½ cups fresh blueberries
  • 2 tablespoons ground flaxseeds
Directions
  1. In a large bowl mix together the flour, baking powder, salt, baking soda.
  2. In a separate bowl mix together the buttermilk, sugar, egg, applesauce, vanilla, oil, and lemon zest.
  3. Add the wet ingredients in with the dry then fold in the blueberries and ground flax seeds.
  4. Add dough into a greased muffin tin. Bake on 400 for 25 minutes.
