Roasted Strawberry Bruschetta With Goat Cheese & Bacon

Recipe Serves 8-10 as an appetizer
  • 1 Baguette, sliced about ¾" thick
  • olive oil
  • salt
  • 5 oz. goat cheese
  • 1 quart fresh strawberries, washed and sliced
  • ¼ cup balsamic vinegar
  • 6-7 slices bacon, cooked and crumbled
  • handful of fresh basil, chopped
  1. Preheat oven to 400 degrees. Drizzle each slice of bread with olive oil, sprinkle with a pinch of salt, and place on baking sheet. Bake 7-10 minutes or until bread begins to turn a golden brown, flipping them over halfway through. Remove from oven and set aside.
  2. Reduce heat on the oven to 350 degrees.
  3. Add the sliced strawberries into a bowl and mix with the balsamic vinegar. Spread strawberries out on a baking sheet and bake for 10 minutes. Remove and let cool.
  4. Spread each piece of the toasted baguette with the goat cheese and top with roasted strawberries, bacon pieces and chopped basil.
  5. Serve immediately
