Cheddar-Sage Drop Biscuits

  • 1¼ cups unbleached all-purpose flour
  • ¾ cup white whole-wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon sugar
  • ¾ teaspoon salt
  • ½ teaspoon baking soda
  • 4 tablespoons unsalted butter, cut into small cubes
  • ¼ cups low fat buttermilk
  • ¾ cup shredded cheddar cheese
  • 1 tablespoon dried sage
  1. Preheat oven to 450 degrees. Line a large baking sheet with parchment paper and set aside.
  2. In a large bowl, whisk together the fours, baking powder, sugar, baking soda, and salt. Using your fingers mix in the cubes of cold butter until mixture resembles course meal. Stir in the cheddar cheese and sage. Add Buttermilk and stir until just combined.
  3. Drop round spoonfuls of dough (2-3 tablespoons) onto prepared baking sheet. Bake 12-15 minutes or until golden brown. Remove from oven and serve warm.
