  • ½ cup unsweetened cocoa powder
  • ½ cup honey
  • pinch of sea salt
  • 1 teaspoon vanilla extract
  • 1 cup roasted tahini
  1. In a medium bowl mix together the cocoa powder and ½ cup very hot water, stirring until it makes a smooth paste. Add the honey, sea salt and vanilla and stir to combine. When the honey is well incorporated stir in the tahini paste until completely combined. (You may need to add a few more tablespoons of hot water to thin the mixture to the right consistency. Add 1 tablespoon at a time and stir to check consistency. You shouldn't have to add more than 3 tablespoons to get the right texture). Let the butter rest at least an hour before serving to allow the flavors to mingle.
  2. The butter will keep at room temperature for 3 days or up to 1 month in the fridge, but you should bring it to room temperature before serving.
