Teff Flour Chocolate Chip Banana Bread

  • 1¾ cup Teff Flour
  • ¼ cup arrowroot flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 large overripe bananas (1½ cups)
  • ⅓ cup coconut sugar
  • ⅓ cup melted coconut oil
  • 1 teaspoon vanilla extract
  • ¼ cup Almond milk
  • 2 eggs
  • ¼ cup, + more to sprinkle on top, of chocolate-chips (I used dairy-free)
  1. Preheat oven to 350 degrees. Grease a large bread pan and set aside
  2. In a large bowl, whisk together the flours, baking powder, baking soda and salt.
  3. In a separate bowl combine the sugar, bananas, coconut oil, vanilla extract, almond milk and eggs.Mix well
  4. Pour the wet ingredients in with the flour mixture and mix together using a large spoon. Fold in the chocolate chips.
  5. Pour batter into the bread pan. Bake for 40-45 minutes. Allow to cook for 5 minutes before removing from the pan. Continue to cool on a wire rack.
