Crackers with Roasted Tomatoes and Goat Cheese

  • 20 Breton Artisanal Sweet Potato and Ancient Grain Crackers
  • 4 cups grape tomatoes
  • 3 tablespoons olive oil
  • 4 oz. Goat Cheese
  • salt and pepper for seasoning
  • Fresh basil, chopped to garnish
  1. Preheat oven to 400 degrees
  2. Add the tomatoes to a baking sheet and drizzle with the olive oil, salt and pepper. Roast in the oven for 20 minutes or until the tomatoes begin to burst.
  3. Spread evenly the Goat cheese over top each cracker. Top with the tomatoes( 3-4 for each cracker) and sprinkle with fresh basil.
