- 1 lemon, juiced
- 1 tablespoon finely diced onion
- 2 tablespoons chopped fresh parsley
- 1 tablespoon red wine vinegar
- ½ tablespoon honey
- 2 teaspoons Dijon Mustard
- ¾ teaspoon salt
- ½ cup olive oil
- ¼ cup Wonderful Pistachios, shells removed
- In a blender and the lemon juice, onion, parsley, red wine vinegar, honey, Dijon, salt and olive oil and process until smooth.
- Add in the pistachios and pulse until chopped and and all ingredients are well blended.
- Store in the fridge for up to one week.
