Pistachio Vinaigrette

  • 1 lemon, juiced
  • 1 tablespoon finely diced onion
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon red wine vinegar
  • ½ tablespoon honey
  • 2 teaspoons Dijon Mustard
  • ¾ teaspoon salt
  • ½ cup olive oil
  • ¼ cup Wonderful Pistachios, shells removed
  1. In a blender and the lemon juice, onion, parsley, red wine vinegar, honey, Dijon, salt and olive oil and process until smooth.
  2. Add in the pistachios and pulse until chopped and and all ingredients are well blended.
  3. Store in the fridge for up to one week.
