Paleo Zucchini Bread with Collagen

  • 1 cup grated zucchini
  • 1½ cup almond flour
  • ¼ cup coconut flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 large eggs
  • ½ teaspoon cinnamon
  • ¼ cup honey
  • 1 ripe banana, mashed
  • ¼ cup collagen hydrolysate or peptides
  1. Preheat oven to 350 degrees. Grease a loaf pan and set aside
  2. Grate the zucchini. Squeeze out the excess moisture
  3. In a large bowl add the flours, baking soda, salt, cinnamon and collagen. In a separate bowl mix the mashed banana, shredded zucchini, eggs, and honey until well incorporated. Add the wet ingredients to the dry and stir until everything is mixed together.
  4. Add the mixture to a loaf pan and bake for 40-45 minutes. Remove from oven and allow to cool
