Grain-Free Pumpkin Spice Granola

  • 1 Cup almonds, chopped
  • 1 Cup cashews, chopped
  • 1 cup pumpkin seeds
  • ½ cup coconut flakes
  • 2 tablespoons chia seeds
  • 2 tablespoons flaxseeds, ground
  • ¼ cup almond flour
  • ⅓ cup pumpkin puree
  • ⅓ cup nut butter (I used Almond)
  • 2 tablespoons coconut oil, melted
  • ⅓ cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • ½ tablespoon cinnamon
  • ½ teaspoon sea salt
  • 2 teaspoons pumpkin pie spice
  1. Preheat oven to 325 degrees.
  2. Add nuts and seeds to a large mixing bowl and stir in the coconut flakes, chia seeds, flaxseeds, almond flour, cinnamon, salt, and pumpkin pie spice.
  3. In a separate bowl, whisk the pumpkin, coconut oil, nut butter, vanilla and syrup. Pour mixture over the dry ingredients and stir till fully covered.
  4. Pour the granola on to a parchment lined baking sheet. Using a spatula, gently spread the granola into an even layer, keeping the clusters together.
  5. Bake 15 minutes. Gently stir, then bake for an additional 10-15 minutes.
  6. Allow to cool then store in a glass jar or other sealed container.
