It’s a few days before Valentines Day and I have the perfect snack mix to share with all of you. It’s the perfect balance of sweet and salty and it makes a great treat for all holidays, a movie night, or a tailgating party. I’ve learned that after having a child I can find a way and a reason to celebrate any holiday. It’s easy to feed off their excitement, and since my daughter has been learning all about Valentines Day at school this month, singing songs and making crafts, I wanted to continue that fun and excitement at home. I made this snack mix to munch on while we made Valentine cards for family and because sweet and salty mixes are never a bad idea. Especially when popcorn is involved. And M&M’s. And Marshmallows.
I mentioned last week in my Friday Favorites post that I’ve been obsessed with popcorn lately. I don’t know if it’s a pregnancy craving or a new-found love since I never gave it much of a chance in the past but I simply can’t get enough. I saw this recipe from Two Peas and Their Pod and knew I wanted to turn it into a festive treat for Valentines Day. I reduced the amount of butter and sugar by half in order to lightly coat the popcorn and pretzels and instead of corn syrup I used honey. It turned out perfectly sweet and you still get a taste of that gooey mixture in every bite.
This popcorn mix is so easy to make. All you have to do is spread the popcorn and pretzels out on a baking sheet; heat the sugar, butter and marshmallows in a saucepan; then pour that sticky sweet goodness over top. Use your fingers to spread out all the love and try restraining yourself from eating the bits that want to stick to your hands.
This fun and festive snack mix is highly addictive so don’t say I didn’t warn you. All the crunchy goodness will keep you grabbing for more and more. Feel free to swap out different colored M&M’s for other holidays or even find certain colors that represent your favorite team for game-day.
Recipe Adapted from Two Peas and Their Pod
- 8 cups popped popcorn
- 2 cups pretzels
- ½ stick butter
- ½ cup light brown sugar
- 1 cup mini marshmallows
- 2 tablespoons honey
- ½ teaspoon vanilla
- 1 teaspoon sea salt
- 1 cup Peanut M&M's (plain will work too)
- Place popcorn and pretzels on a lined baking sheet. Set aside
- In a saucepan, melt butter. Add the sugar and honey and cook until melted and combined. Add the marshmallows and stir until completely melted. Remove from heat and stir in the vanilla ans salt.
- Evenly pour the marshmallow mixture over the popcorn and pretzels. Gently stir until everything is well coated. Stir in the M&M's. Store in an airtight container for up to one week.
