Now back to these tacos. They’re perfect for lunch or dinner and a great way to add in more veggies. They can literally be on your table in minutes, especially if you use store bought hummus and make your chicken ahead of time.
I love Mediterranean food and these tacos were a huge hit with the whole family. The warmed pita bread covered in a thick layer of hummus is everything. Crunchy vegetables, tangy feta cheese, and tender roasted chicken is then added to finish them off.
Taco Tuesday just got a fun new twist with these Mediterranean Chicken Tacos for a healthy meal the whole family will love.
- 4 Toufayan Bakery Organic Sprouted Pita Bread
- For the chicken:
- 2 chicken breast
- 1 tablespoons olive oil
- ½ teaspoon salt
- ½ teaspoon Pepper
- 1 teaspoon Oregano
- Additional Toppings:
- Artichoke Hearts
- Crumbled Feta cheese
- cucumbers, diced
- Tomatoes, diced
- Prepare the chicken: Heat the oven to 450 degrees. Place the chicken breast in a baking dish and brush with olive oil. Sprinkle with the salt, pepper and oregano. Bake for 15-20 minutes, or until the chicken is cooked through and no longer pink. (Thicker breast will take longer). Remove from oven and slice into strips.
- While the chicken is cooking prepare the toppings by chopping and dicing the vegetables.
- Warm the pita bread in the oven or in the microwave. Spread a good amount of hummus on the bottom of each pita bread. Top with the chicken, lettuce, artichoke hearts, tomato, cucumber and feta cheese. Fold up like a taco and enjoy!
