My husband and I are hiking 30 miles along the Appalachian Trail this coming Saturday to raise money for the Cystic Fibrosis Foundation. We’re joining our good friends for the Fall Xtreme Hike in honor of our friends niece, and others, who suffer from this debilitating disease. Our morning starts early, around 2 am, and will end sometime in the late afternoon or early evening. One of the things I’ve been thinking about since we decided to take this hike is how I will keep myself nourished.
One of those ways is with these no-bake protein bites.
These bite-sized snacks have a punch of protein thanks to Collagen Peptides. Collagen is the most abundant protein in our body and is found in our muscles, skin, blood, bones, cartilage, and ligaments. Squeezing in an extra serving of this vital protein is beneficial as collagen is the major component of connective tissues that make up several body parts.
At first I was calling these bites cookies but I didn’t want to mistake them for a decadent little treat. While tasty, I wanted to focus on nutrition more than something that would help curb my sweet tooth. They may be small but they’re mighty with a healthy mix of protein, fat, and fiber packed into them. I have no doubt these little snacks will make the perfect fuel for our hike.
- ¼ cup coconut Flour
- ½ cup Almond butter
- ¼ cup collagen peptides
- ½ teaspoon vanilla
- 1 tablespoon maple syrup
- 1 tablespoon coconut oil, melted
- ¼ cup group flaxseeds
- Add the flour, almond butter, collagen, vanilla, maple syrup, coconut oil and flaxseeds to a food processor. '
- Process until well combined and a thick batter forms. Roll mixture into 1" balls then flatten using the palm of your hands.
