We’ve had the most unbelievable weather this week in Charlotte, with temperatures in the 70’s all week long. I knew the warm weather wasn’t here to stay so we’ve taken advantage of spending as much time as possible outside with trips to the park, walks and frozen yogurt. It’s been a busy but good week for sure and now that the cooler weather is moving back in I plan to spend the weekend with lots of relaxing. I hope you all are able to do the same as well.
I finished book five this week for my 2019 reading goal. A river of stars is the story of a pregnant woman sent from China to Southern California with the hopes of having her baby in a safe and comfortable place and better opportunities for her child. This book gives a little cultural background as to why people long to come to America; Dreams for better opportunities, jobs, education, freedom, and more. The story line had promise and I wanted to see how the story ended but the journey to get there was a bit to slow for me.
My husband loves Eggplant Parmesan so this gluten-free version is happening soon.
I’m planning to stash my freezer with these energy bites this weekend.
