Baked Chicken Tenders (Gluten Free)

  • 1½ lbs. chicken tenders
  • 1½ cups Breton Gluten free original with flax crackers, crushed (1- 4.7oz. box)
  • 1 egg white
  • ¼ cup coconut oil, melted
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon parsley
  • cooking spray
  • salt and pepper to taste
  1. Heat oven to 450 degrees.
  2. Season chicken with salt and pepper on both sides.
  3. Set a wire rack on top of a baking sheet coated with cooking spray.
  4. Combine the cracker crumbs, coconut oil, parsley and measured salt and pepper in a bowl Place egg white in a separate bowl ( Whisk till foamy).
  5. Dip chicken tenders in the egg whites, allowing any excess to drip off, then dip into cracker mixture, turning and patting to get the crumbs to stick.
  6. Place the coated chicken on the prepared rack.
  7. Bake 15 minutes.
