Skinny Strawberry Muffins

Ingredients
  • 2½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ cup granulated sugar
  • ½ cup light brown sugar, packed
  • 1¼ cup unsweetened applesauce
  • 2 egg whites, beaten
  • 2 cups diced strawberries
Directions
  1. Preheat oven to 350 degrees. Spray a muffin pan with nonstick cooking spray. Set aside.
  2. In a large bowl, mix together flour, baking soda, and cinnamon. Set aside. In a separate bowl, mix brown sugar, granulated sugar, and applesauce together until no lumps remain. Add in the beaten egg whites, mixing well. Add the wet ingredients to the dry until combined; do not overmix. Fold in the strawberries.
  3. Divide batter evenly among the muffin cups. Bake for 15-18 minutes in a 350 degree oven until a toothpick inserted in the middle of the muffin comes out clean.
  4. Store muffins in a sealed container. They may also be frozen.
