Pumpkin, Carrots and Raisin Muffins

Ingredients
  • 2 cups white whole wheat flour
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 2 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • ½ cup brown sugar
  • 3 eggs
  • ½ cup Plain non fat Greek Yogurt
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots (about 2 large)
  • ½ cup raisins
Directions
  1. Preheat oven to 350 degrees
  2. Combine the flour, baking soda, salt, cinnamon and nutmeg in a large bowl.
  3. In a separate bowl blend sugar with the eggs, yogurt, pumpkin and vanilla. Pour wet ingredients in with the dry.
  4. Fold in grated carrots and raisins.
  5. Bake for 20-25 minutes
