Herbed Goat Cheese Stuffed Chicken Breast

  • 2oz. herb goat cheese
  • 2oz. diced pancetta
  • 3 skinless, boneless chicken breast
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  1. Preheat oven to 400 degrees
  2. Combine the goat cheese and pancetta in a small bowl. Cut a horizontal slit down the side of each chicken breast forming a pocket. Divide the goat cheese mixture into three equal portions and stuff inside of each pocket; close opening with a toothpick. Sprinkle the outside of each chicken evenly with salt and pepper.
  3. Add chicken to a baking dish and bake for 25 minutes or until chicken is done. Discard the toothpicks.
  4. Serve immediately
