Snickerdoodle Cashew Butter

  • 3 cups raw cashews
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1-2 tablespoons coconut oil, melted, if needed
  1. Place cashews into a food processor and process until smooth. You will need to periodically stop and scrape the sides. Once smooth and in the cinnamon, vanilla and coconut oil and continue to blend until combined. The process will take about 10 minutes.
  2. Store in a glass container, such as a mason jar, in the refrigerator.
