BBQ Roasted Chickpeas

  • BBQ Spice Rub
  • 2 tablespoons coconut sugar
  • 2 tablespoons paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Roasted Chickpeas
  • 2 15 ounce cans chickpeas, rinsed and drained
  • 2 tablespoons olive oil
  • 1½ tablespoons BBQ seasoning
  1. Preheat oven to 400 degrees.
  2. Rinse and Drain the chickpeas. Using a paper towel, dry the chickpeas thoroughly. The should be dry to the touch.
  3. Toss the chickpeas with the olive oil and spread in an even layer on a baking sheet.
  4. Roast the chickpeas in the oven for 25-30 minutes, stirring every 10 minutes. They are done when golden brown and crispy on the outside and soft in the middle.
  5. Remove from the oven. Sprinkle with the BBQ seasoning and evenly coat. Serve immediately or store in an airtight container.
