- BBQ Spice Rub
- 2 tablespoons coconut sugar
- 2 tablespoons paprika
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Roasted Chickpeas
- 2 15 ounce cans chickpeas, rinsed and drained
- 2 tablespoons olive oil
- 1½ tablespoons BBQ seasoning
- Preheat oven to 400 degrees.
- Rinse and Drain the chickpeas. Using a paper towel, dry the chickpeas thoroughly. The should be dry to the touch.
- Toss the chickpeas with the olive oil and spread in an even layer on a baking sheet.
- Roast the chickpeas in the oven for 25-30 minutes, stirring every 10 minutes. They are done when golden brown and crispy on the outside and soft in the middle.
- Remove from the oven. Sprinkle with the BBQ seasoning and evenly coat. Serve immediately or store in an airtight container.
