Pea Pesto

Ingredients
  • I cup peas, fresh or frozen, thawed
  • 1 clove garlic, peeled and chopped
  • 1½ cups fresh basil
  • 1 teaspoon lemon juice
  • ½ cup olive oil
  • ½ cup fresh parsley
  • ½ teaspoon salt
Directions
  1. Add the ingredients to a food processor or high speed blender.
  2. Blend until smooth.
  3. Store in the refrigerator, covered, for up to 1 week
